Ingredients
For the Fudge
- 300g Callebaut Milk Chocolate 823
- 397g tin sweetened condensed milk
- 30g unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
Optional Toppings
- Chopped nuts
- Chocolate shavings
- Sea salt flakes
- Mini chocolate chips
- Cocoa powder
Method
Melt the Chocolate
- Line a square baking tin, approximately 20cm x 20cm, with baking paper. Leave some paper hanging over the sides to make the fudge easier to remove later.
- Place the Callebaut Milk Chocolate 823, condensed milk and butter into a heavy-based saucepan.
- Heat the mixture over a low heat, stirring continuously with a spatula.
- Continue heating gently until the chocolate and butter have completely melted and the mixture becomes smooth and glossy.
- Do not use high heat. The mixture can become too hot and may affect the final texture.
Add the Flavour
- Remove the saucepan from the heat once the mixture is completely smooth.
- Add the vanilla extract and a small pinch of salt.
- Stir gently until everything is fully combined.
- If you want to add chopped nuts or chocolate chips, fold them into the mixture at this stage.
Set the Fudge
- Pour the warm fudge mixture into the prepared baking tin.
- Use a spatula to spread it evenly across the tin.
- Gently smooth the surface.
- Add your chosen toppings while the fudge is still warm.
- Place the tin in the refrigerator and allow the fudge to set for at least 2–3 hours.
- Once firm, lift the fudge from the tin using the baking paper.
- Cut into small squares using a sharp knife.

Frequently Asked Questions
Why is my chocolate fudge too soft?
Fudge can remain soft if it has not had enough time to set or if the ingredients were not heated correctly. Place it in the refrigerator for longer and make sure the mixture was properly combined before setting.
Can I use dark chocolate instead of milk chocolate?
Yes. Dark chocolate can be used if you prefer a stronger and less sweet chocolate flavour. Keep in mind that changing the chocolate can alter the final texture and sweetness.
Can I use white chocolate?
Yes. White chocolate can be used to create a sweeter and creamier fudge. Because white chocolate has a different composition, the final texture may be softer.
How long does homemade fudge take to set?
Most fudge needs around 2–3 hours in the refrigerator to become firm enough to cut. Leaving it for longer can make cutting easier and give you cleaner pieces.
Can I add nuts to chocolate fudge?
Yes. Chopped almonds, hazelnuts, pecans or walnuts can be added before the fudge is poured into the tin. Make sure the nuts are chopped into small pieces for easier slicing.
Why is my fudge grainy?
A grainy texture can happen when the chocolate becomes too hot or the ingredients are not melted together smoothly. Keep the heat low and stir continuously while preparing the mixture.
Can I make fudge without condensed milk?
Yes, there are traditional fudge recipes made with sugar, butter and cream or milk. However, this recipe uses condensed milk because it provides a simple way to achieve a soft and creamy texture.
Can I make this fudge ahead of time?
Yes. Chocolate fudge is ideal for preparing ahead. Once set, keep it in an airtight container and cut it into pieces when you are ready to serve.
